Steak Cooking Times

I ruined a lot of expensive steaks before I got this right. The times below are for a 1-inch thick steak that's been sitting out for 30 minutes. If yours is thicker, add time. Thinner, subtract. And honestly? Get a meat thermometer - it takes the guesswork out completely.

How to Cook a Perfect Steak

Bring to Room Temp

Take the steak out of the fridge 30-45 minutes before cooking. A cold center means uneven cooking.

Pat Dry & Season

Pat the steak completely dry with paper towels. Season generously with salt and pepper. Dry surface = better sear.

High Heat

Get your pan or grill screaming hot. Add oil with a high smoke point (avocado, vegetable). The steak should sizzle immediately.

Don't Touch It

Place the steak and leave it alone until it's time to flip. Moving it prevents a good crust from forming.

Rest Before Cutting

Let the steak rest for 5-10 minutes after cooking. This lets the juices redistribute. Skip this and your plate becomes a puddle.
