Tips for Perfect Vegetables
Cut to Uniform Size
Equal-sized pieces cook at the same rate. Big chunks and small bits in the same pot = some overcooked, some undercooked.
Salt the Water
Salt seasons the vegetables as they cook and helps green vegetables stay bright. Add about 1 tablespoon per quart of water.
Ice Bath for Color
For bright green vegetables you're serving cold or reheating later, plunge immediately into ice water after cooking. This locks in the color.
Don't Overcrowd
Steam needs to circulate. If vegetables are piled on top of each other, the bottom ones cook faster than the top. Work in batches if needed.
