Baking Times & Temperatures

Baking is chemistry - the right temperature and time are crucial. Always preheat your oven, and use an oven thermometer if yours runs hot or cold.

Baking Tips

Always Preheat

Put items in a cold oven and your timing goes out the window. Most ovens need 15-20 minutes to fully preheat.

Use Middle Rack

The middle of the oven has the most even heat. Top rack browns faster; bottom rack crisps the base. Use them intentionally.

Don't Open the Door

Every time you open the door, you lose 25-50°F. Only check when necessary, and check through the window if you can.

Know Your Oven

Many ovens run hot or cold. An oven thermometer costs a few dollars and saves countless burnt batches.

How to Tell When It's Done

🍪 Cookies

Look for golden-brown edges with a slightly underdone center. They continue cooking on the hot pan after removal. If they look done in the oven, they're overdone.

🧁 Muffins & Cupcakes

Insert a toothpick in the center - it should come out clean or with a few moist crumbs. Wet batter means more time needed.

🍞 Bread

Tap the bottom - a hollow sound means done. For accuracy, use a thermometer: 190°F for soft breads, 200-210°F for crusty loaves.

🍫 Brownies

The toothpick test doesn't work well here - some moisture is good. Edges should pull slightly from the pan, center should be set but jiggly.
